Bombas to open restaurant featuring fresh Italian

Bomba’s Fresh Italian, owned by Alex and Breelyn Bomba, is set to open in mid-September.
The Bombas are well-known in the Jonesborough area, having worked in their family’s restaurant and catering businesses, which include Main Street Café and Main Street Catering.
Breelyn has a background in the hospitality industry where she has worked with boutique hotels and fine restaurants.
Before moving back to Jonesborough, she was the director of catering at TPC Potomac, an exclusive Washington, D.C. area country club owned by the PGA Tour. She currently serves as the catering director for Main Street.
Alex is a classically-trained chef who has led kitchens in Louisville, Ky., and Washington, D.C.
He previously worked as a chef in Arlington, Va., at Eventide Restaurant, the recipient of a James Beard nomination as “best new restaurant in the U.S.”
Alex is currently serving as the executive chef for Main Street. He also handles sales and marketing for the restaurant.
“Bomba’s Fresh Italian will be a very casual family-friendly restaurant,” he said of his newest endeavor. “We will be featuring all the favorite Italian dishes such as chicken parmesan, pastas and lasagna.”
With “really well-made” marinara and alfredo sauces as his bases, Bomba says he is putting a real emphasis on using fresh ingredients.
“The word ‘fresh’ is important to me,” Bomba said. “We will be growing a lot of our own fresh herbs, and being a big proponent of the farmers market, we will also be using as much locally grown produce as possible and still keep it a budget-friendly restaurant.”
Menu item prices, he said, should range from $5-9 for lunch and dinner prices will start as low as $7-8 for specialty salads, with entrée selection prices topping out around $20.
Bomba plans to be open for lunch, Monday through Friday, 11 a.m. to 2 p.m. and for dinner, Tuesday through Saturday, 5-10 p.m.
